What a week! I remained committed to my fitness goals, and exercised approximately sixty minutes per day and included additional walks throughout the day; I ate healthy meals the majority of the time (I caved and splurged on some chocolate); and I started the process of getting my skin back to normal – one chemical peel, one dermatologist appointment, and one prescription for a topical cream, so I hope to see improvement soon!

Despite having a productive week, I am so glad it’s the weekend. I plan on watching lots and lots of Netflix with the hubs, but other than that, weekend plans include weight lifting classes, volunteering for the SPCA, and dinner and a movie to celebrate Valentine’s Day. For Valentine’s Day, we decided to keep it simple, and what’s more simple than taco night!

Crock Pot Turkey Tacos

Ingredients: 1 pound lean ground turkey; 1 can of black beans; 1 can of corn; 1/4 cup chopped onion; 1 can of tomato sauce; 1 teaspoon cumin; 2 teaspoons chili powder; 1 teaspoon black pepper; 1 teaspoon red pepper; 1 teaspoon paprika; and 1 teaspoon garlic powder.

Instructions: Saute the ground turkey until completely browned; add all ingredients into crock-pot and cook on low for 3-6 hours; serve with shredded lettuce and salsa.

21 Day Challenge

I don’t know if I’m just not used to the cold weather/winter, but I had an “off” week last week. I can’t seem to find my groove, despite having so much to look forward to! I have multiple work trips in the pipeline, as well as a trip to CHINA with my love in less than three months! Eek!

I woke up today and decided that things are going to be different starting TODAY. And then, to help reset my mind a bit, I realized that there are 21 days left in the month, so what better time than to start a 21 Day Challenge?

Challenges:

Exercise at least 30 minutes a day, 7 days a week, including at least TWO days of high-intensity interval training (HIIT) workouts.

Eat healthy and nutritious meals.

Go on daily walks during my lunch break.

Challenge my husband and I to do something other than sit at home on weeknights, whether it’s going for a walk, browsing Barnes and Noble, seeing friends, going to a movie…whatever!

Day 1: Today (February 7, 2015):

I walked to and from Target this morning (approximately 4 miles), took the dog on a long walk, and have eaten only lean protein and fruit today. The rest of the day I’ve been resting, folding laundry, or cleaning the apartment – I woke up before 6 a.m. this morning, wide awake, and needed to have some downtime before our black tie event tonight!

Day 2: Plans include a hike with a girlfriend and our dogs. I also plan to prep my M-F breakfasts and lunches tomorrow – salads with ground turkey, oatmeal, and cut up veggies for snacks.
